Butchering your wild game harvests can save you money and be very rewarding. The Ergo Max Knife Kit from Outdoor Edge is a five knife set with a knife sharpener that helps make this job quick and easy. For years, I have been home butchering deer with a variety of kitchen and filleting knives. This fall, I used one of these sets to butcher some deer and was extremely pleased with how they worked and felt in my hands.
The knives in this kit were inspired from knives used by professional butchers and crafted from high-carbon steel finished with a premium black titanium coating for extended corrosion resistance. Each knife was razor sharp out of the packing and very easy to sharpen back up. Each knife in the set features Outdoor Edge’s ErgoMax handles which are designed to reduce hand fatigue when using for them for extended periods of time.
The kit consists of: a four-inch drop-point blade for field dressing, a five-inch deepbellied skinning knife for skinning animals, a six-inch semi-stiff straight boning knife and six-inch mid-flex curved boning knife. The latter two were ideal for deboning meat for sausage and cutting up various muscle groups to create large steaks and roasts. An eight-inch Granton Butcher knife rounds out the kit, and is perfect for cutting large cuts of meat into smaller roasts and steaks. I’ve also used the Granton to carve roasts once cooked. The sharpener is a two-stage, pull-style with coarse carbide and fine ceramic sharpeners, and worked well to touch up the knives while working with them.
